Amedei chocolate meets Matias Perdomo: the tastiest collaboration of 2026 is born

The Tuscan signature chocolate brand debuts in fine dining together with the Contraste chef: a journey between seasonal tastings and an exclusive creation for Christmas 2026.

When chocolate meets haute cuisine, the result goes far beyond a simple dish. It is a dialogue between techniques, raw materials and creative visions that finds a new expression in the collaboration between Amedei and Matias Perdomo, chef of Contraste. A project that will accompany the second half of 2026 and which will culminate with a limited Christmas edition intended for chocolate and fine dining enthusiasts.

The meeting was born from the idea of ​​taking chocolate beyond its traditional boundaries. After having explored the dialogue with design and hospitality, Amedei chooses to deal with signature cuisine, entrusting one of the most creative chefs on the Italian scene with the task of reinterpreting his own heritage of flavours. The starting point remains the philosophy of the Tuscan maison: an essential recipe, built on cocoa, cane sugar, selected milk and fruit, processed according to the bean-to-bar approach that has represented the brand’s signature for over thirty years.

The first chapter of the collaboration comes to life from Contraste, where Amedei chocolate will become part of the gastronomic experience proposed at the end of the tasting. The petit fours will follow the rhythm of the seasons: during the summer the dark chocolates will be accompanied by peaches, raspberries and watermelon, while autumn will bring to the table a tribute to Tuscany and Italian literature through a personal interpretation of the Divine Comedy. A journey inspired by Dante’s three kingdoms that will accompany guests in a progression of taste destined to culminate with the famous “Porcelana”, the most iconic and precious reference of the Amedei collection.

The collaboration will then continue outside the restaurant. For Christmas 2026, Matias Perdomo will sign a limited edition creation created together with Amedei using Toscano Black 70, the dark chocolate that at the end of the 1990s contributed to spreading the culture of bean-to-bar chocolate in Italy thanks to the direct control of the entire supply chain, from the selection of the beans to the bar. The special edition will be available exclusively through the brand’s e-commerce and will arrive in time for the holidays.
