The Milanese startup records a continuous growth trend in the average price per kilo of panettone: +%9 for industrial panettone compared to 2024, +3% for pastry ones. Significant increases, however, if we consider the last 5 years: since 2021, industrial panettones have increased by 55%, artisanal ones by over 21%. Among the former, Bistefani is confirmed as the cheapest with Carrefour Extra, while Galup is the most expensive. Among the artisanal panettone: Pasticceria San Gregorio is the only one under 40 euros per kilo; Gattullo and Marchesi are the most expensive: for the first time the average price reaches 50 euros per kilo

Milan, 5 December 2025 – If compared to 2024 the increase in prices is only slight, looking at the last five years shows constant and significant growth. This is confirmed by thePanettone Observatory Of Maiora Solutionswhich again this year photographed the price trend of traditional panettone in the Lombardy capital. Edition number six drew comparisons 30 of the most representative brands: 14 industrialists and 16 belonging to the most famous Milanese pastry shops.

An investigation that Maiora, specialized in the development of AI solutions and analysis systems on the prices of products and services on the market, carried out through Resmartthe augmented intelligence tool dedicated to optimizing the results of companies in the food sector.

The analysis therefore highlights this year a general increase in prices compared to 2024, albeit limited: in fact, large-scale retail panettones grow by + on average9%while the pastry ones of +3%.

However, one fact emerges: in the last few 5 years price increases they were significant. In 2021 the average price per kilo of a artisanal panettone it was equal to 36.86 euros, this year it is close to 45 euros per kilo (44.74 euros): +21.4%.

THE industrial panettones average price goes from 5.53 euros in 2021 to 8.58 euros in 2025: +55%.

Andrea Torassa and Emilio Zuninofounders of Maiorathey commented: «Our Observatory says that the average prices per kilo of panettone are increasing and affect both artisanal and industrial productions. From 2021 to today, when we launched the Panettone Observatory, notable growth has been recorded, so much so that today a pastry panettone costs on average around 45 euros per kilo, almost 9 euros more than four years ago. It is no better, albeit with due proportions, for industrial production which from an average cost of around 5 euros per kilo recorded in 2021 reaches this year to exceed 8 euros. In general, pastry panettone represents a more homogeneous product universe, while industrial ones vary a lot and for a Bistefani that costs just over 5 euros, Tre Marie, Terre d’Italia and Motta present products that cost almost three times as much.”

Artisanal pastry panettone

Resmart analyzed the prices per kilo of the panettone produced by most famous pastry shops in Milan. On a general level, the price per kilo of artisanal pastry panettone has increased by +3% compared to 2024: many brands have essentially kept prices unchanged compared to last year, with the sole exception of Gattullowhose panettone costs 11% more and the average price per kilo has reached its peak 50 euros. The only brand that has reached that threshold together with Marquises.

San Gregorio pastry shop it’s the least expensive, the only one under i 40 euros per kilo.

Industrial panettone

This year there has been a significant increase in the average costs per kilo of industrial panettone: +9% compared to 2024. The Maiora Solutions survey shows a more varied price panorama compared to artisanal panettone: in fact, they range from Bistefani And Carrefour Extrathe cheapest at 5.20 euros per kilo, up to brands that cost almost three times as much.
